Introduction
Cynara scolymus belonging to the Asteraceae family, is a perennial medicinal plant originating from the Mediterranean region. Introduced to Vietnam by the French in the 19th century, it is primarily cultivated in temperate regions such as Đà Lạt, Sa Pa, and Tam Đảo. In traditional medicine, the entire artichoke plant, including flowers, leaves, stems, and roots, is used for its benefits, such as promoting bile flow, acting as a diuretic, detoxifying the liver, and aiding digestion. The artichoke root, though less commonly used than the leaves and flowers, is still utilized in folk remedies and traditional medicine due to its unique pharmacological properties.
